For this reason, more than 30 countries have a law that regulates the maximum amount of harmful ingredients to be used in food production. This had a high impact on the formulation of thousands of foods and beverages, leading to the need to replace these ingredients with healthy alternatives. As a consequence, there is a great challenge in maintaining the flavor for which consumers choose and enjoy food. At the same time, the growing trend towards natural, plant-based, clean-label, and environmentally-friendly products, jeopardizes current products and production processes, which are unattractive due to the high degree of contamination they entail, such as CO2 emissions, excessive water consumption, and deforestation.
How are they Solving it?
NATURANNOVA is developing a platform that combines computational biology and biomanufacturing to discover the next generation of natural and functional ingredients. Our computational platform focuses on defining the rules that lead to the discovery of EvoIngridients, proteins from plant sources, based on the parameters that control the nature of peptides, allowing us to design tailor-made ingredients, reducing time and costs on its developing process. Using the power of microorganisms, we are biomanufacturing our EvoIngridients through a sustainable and “Green” process, to expand it to industrial scales. Implementing our technological approach, we are developing the perfect tailor-made sugar substitute. It is of protein origin, 100% natural, non-caloric and digestible. In turn, it is a high intensity sweetener, which with just a few grams of proteins/peptides we can replace kilograms of sugar.
